Heat a skillet over medium heat; add the butter, onions, salt and brown sugar. Cook the onions, allowing them to brown but not burn. Every few minutes, stir the onions, scraping the brown from the bottom of the pan back into the onions.
If you find your onions are drying out, add a teaspoon or two of water to the pan. Continue to frequently stir and scrape the pan.
Continue to cook until the onions are a deep golden brown, about 20 to 30 minutes.

Preheat the oven to 425 ˚F.
In a food processor, combine 200 grams goat cheese, cream cheese, caramelized onions and half of the Parmesan. Process until smooth.
Spread into a small oven safe dish. Top with remaining Parmesan.
Bake uncovered until golden brown, about 20 minutes.
Garnish with remaining goat cheese, green onions and freshly cracked black pepper.
This dip is delicious room temperature as well. Simply process, garnish and serve!
