Method
  1. Combine the spice rub. Rub the pork shoulder with the spices until evenly coated. Refrigerate overnight.
  2. Preheat a charcoal or gas grill to 250°F. Pile the coals to one side or keep one side on low.
  3. Add a pan of water to the grill to maintain humidity. Place the pork shoulder on the side with the lowest heat.
  4. Cover and cook 1- 1 1/2 hours per pound until it reaches an internal temperature of 205°F.
  5. Note: the pork shoulder will stall at 150°F for four or more hours
  6. Remove the pork from grill, tent with foil, and let rest about 30 minutes. Using your hands or forks, pull apart the meat.
  7. Serve with fresh rolls accompanied by South Carolina sauce and shredded cabbage if desired.
Here’s How: South Carolina Barbecue Sauce
  1. 1. Combine 1/2 cup yellow mustard, 1/4 cup apple cider vinegar, 1/4 brown sugar, 1 tbsp Worcestershire sauce and 1 tbsp hot sauce.
  2. 2. Whisk until well combined. Season to taste with salt and pepper and more hot sauce, if desired.
