Method
  1. Combine fish sauce, lime juice, sugar and red pepper flakes.
  2. Stir until sugar is dissolved. Toss with shrimp and refrigerate until ready to use, at least 30 minutes.
  3. Cook rice noodles according to package directions.
  4. Run under cold water to stop the cooking. Drain well.

  6. Meanwhile, prepare the sauce by combining the ingredients in a saucepan and whisk until peanut butter melts and sauce is smooth.
  7. Adjust the spice, sweet and sour levels to your taste by adding more red curry, honey or lime juice respectively.
Here's How: Salad Rolls
  1. Fill a shallow dish, which is large enough to fit a wrapper, with hot water. One at a time, soak wrappers in hot water until soft and pliable.
  2. Place the softened wrappers on a tea towel. Along the middle of each wrapper, layer shrimp, noodles, vegetables and herbs.
  3. Roll up tightly. Place seam-side down on a platter. Repeat with remaining wrappers. If desired, cut rolls in half. Serve with peanut sauce on the side.
