Grilled Oysters with Herb and Garlic Butter

Instructions
  1. Heat a charcoal or gas grill to high heat.
  2. Place the oysters cupped side down on the grill.
  3. Close the lid and cook until the shells open, about 2 minutes.
  4. Carefully remove the oysters from the grill.
  5. Run an oyster shucker along the top shell to cut the oyster from the muscle and remove the shell.
  6. Add a small slice of herb and garlic butter (instructions in this week’s Here’s How) and a teaspoon of cheese to each oyster.
  7. Return to the grill, close the lid, and cook just until the cheese melts, about another minute.
  8. For those that prefer cooked oysters, cook an additional 3-5 minutes.
Here's How: Compound Butter
  1. Add the garlic, herbs and lemon zest to a food processor.
  2. Process until roughly chopped
  3. Add the butter. Process until smooth and well combined. Season to taste with salt and pepper.
  4. Transfer butter to a sheet of plastic wrap. Roll into a long log, twisting the ends to tighten. Refrigerate until hard.
  5. To server, unwrap and slice as needed.
