Fried rice is a staple in many Asian cuisines. This Korean version comes together quickly for an easy weekday meal by incorporating pre-made kimchi, a fermented cabbage dish. I’ve used a locally produced kimchi made by Off Beet Farm, which is available on Saturdays at the Alderney Landing Farmers’ Market in Dartmouth. Imported versions can also be found at most Asian markets and some grocery stores.
