Poach pears according to our Here’s How instructions. Next, beat the whipping cream with the icing sugar and reserved vanilla seeds, leftover from Poached Pears, until stiff peaks form. Beat the goat cheese with half the whipped cream until well combined and smooth. Fold in the remaining whipped cream. Serve alongside pears drizzled with syrup.
Here’s How: Poached Pears
1. Peel the pears, leaving the stem. Slice off the end to make level. If desired, gently remove the core using a thin knife
2. Slice the vanilla bean in half lengthwise. Scrape out the vanilla seeds and reserve. In a medium saucepan, combine pears with vanilla bean, honey, wine and water.
3. Cut a circle of parchment paper the size of the pot and cover the pears to keep them submerged. Simmer over medium-low heat until fork tender, about 15-20 minutes. Allow to cool in liquid.
4. Remove the pears and vanilla bean. Simmer the liquid over medium heat until reduced and syrupy. Whisk in butter. Let cool.
