  1. In a large pot of salted water, boil the lobster for 5 to 7 minutes. Immediately place the lobster in an ice bath to halt cooking.
  2. Remove the lobster meat from the shell and roughly chop.
  3. Meanwhile, prepare the puff pastry tarts. Split the vanilla bean in half, lengthwise.
  4. Scrape out some of the seeds and set aside.
  5. Melt the butter in a medium saucepan. Add the vanilla bean and bring to a light simmer.
  6. Add the lobster meat. Simmer until the lobster meat is fully cooked.
  7. Remove lobster meat and keep warm. Remove the vanilla bean from the butter.
  8. Add the sherry to the saucepan and simmer until reduced by half.
  9. Add the cream and some of the reserved vanilla seed. Simmer until reduced and thickened.
  10. Season to taste with salt and, if desired, more vanilla seed. Place the puff pastry tarts on four plates.
  11. Divide the lobster among the tarts. Drizzle the cream sauce around the plate or pour over the tarts. Garnish with chives.
