Method
  1. Bruise the lemongrass by lightly crushing the stalks with the back of a chef’s knife.
  2. Cut off the end and remove the tough outer leaves, leaving the inner yellow stalk.
  3. Chop roughly. Add to a food processor or blender and pulse until well chopped.
  4. Add the garlic, cilantro, soy sauce, fish sauce, sugar and pepper.
  5. Process until a smooth paste forms.
  6. Spread all over the fish. Refrigerate for at least an hour, but preferably overnight.
Here’s How: Cut a pineapple
  1. Slice the bottom and top off the pineapple to create two flat ends.
  2. With the pineapple on its end, cut off the tough outer skin.
  3. Cut the pineapple down the middle into quarters.
  4. Slice off the harder core off each quarter.
  5. Slice the quarters into chunks.
