  1. Grease a casserole dish with 1 tablespoon of the butter.
  2. Heat a large skillet over medium heat and add the remaining butter, pancetta and onion.
  3. Cook for 5 minutes until the pancetta is browned and the onion soft.
  4. If desired, deglaze the pan with wine or Sherry. Add the cream, sage, nutmeg, salt and pepper.
  5. Heat to a boil.
  6. In the casserole dish, layer a third of the squash, followed by a third of the sauce then a third of the cheese.
  7. Repeat with the remaining ingredients to make two additional layers.
  8. Cover with foil and bake 50 minutes.
  9. Remove the foil and continue to bake until golden brown, another 10 to 15 minutes.
  10. Let cool slightly before serving. Garnish with additional sage if desired.
Cutting Squash
  1. Hold the squash firmly; carefully cut the ends of the squash. With the squash flat on its end, slice it in half vertically.
  2. Scoop out the seeds using a spoon.
  3. Hold the squash firmly in your hand or flat on the cutting board; remove the skin using a vegetable peeler.
  4. With the squash flat on the cutting board, cut into desired shape or use a mandolin to slice thinly.
