Method
  1. Preheat oven to 350 °F.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the spinach and cook until wilted, 2 minutes.
  4. Place the spinach into a fine mesh sieve.
  5. Squeeze out the excess liquid.
  6. In a bowl, mix together the spinach with the onions, herbs, spices and cheese.
  7. Season to taste with salt and pepper.
  8. Follow the accompanying instructions to prepare the spanakopita.
  9. Bake until golden brown and crisp, 20 minutes.
  10. Serve warm. (To freeze, place in a freezer bag, separating layers with wax or parchment paper. Simply cook from frozen 30 minutes.)
Here's How: Phyllo Pastry Hors D’ouevres
  1. Step 1: Unfold the phyllo and cut the sheet in half lengthwise. Roll up one half and return to the fridge (up to 3 weeks) for another use. Cut the remaining sheet in half lengthwise and stack on top of each other.
  2. Step 2: Brush the top strip with butter.
  3. Step 3: Place a heaping tablespoonful of filling onto the bottom of the pastry.
  4. Step 4: Fold phyllo over filling, creating a triangle.
  5. Step 5: Continue folding in triangles like a flag. Brush both sides with butter and place on a parchment lined baking sheet.
  6. Step 6: Repeat with remaining filling and pastry. Bake according to recipe.
