Instructions
  1. Pat thighs dry with paper towel and then dredge in flour.
  2. Place a heavy-bottom pan over medium heat.
  3. Add butter and oil. When butter is melted, add chicken and brown on all sides.
  4. When the chicken is browned, remove and set aside. Add red onion.
  5. Turn heat to medium-low. Sauté until the onions are soft.
  6. Transfer the onion to a baking dish.
  7. Add the reserved chicken, tomatoes, cider, stock, rosemary and lemon slices.
  8. Bake in an oven preheated to 375°F for an hour. Turn chicken once during cooking process.
  9. Season the chicken with salt and pepper.
