Method
  1. Make a dressing by combining the first eight ingredients in a jar. Shake well to combine.
  2. Season the dressing to taste with additional chili oil, if desired. Next, make the salad. Bring a large pot of water to a boil.
  3. Blanch the ramen noodles for 1 minute. Drain and place in an ice bath. When the noodles are fully chilled, drain well.
  4. Divide the ramen among four bowls or jars. Arrange the shredded egg crepes (see our Here’s How instructions), shrimp, cucumber, tomatoes, corn and scallions on top. Serve alongside the dressing.
Here’s How: Shredded Egg Crepe
  1. 1. Whisk together two eggs, ½ tsp of salt and 2 tsp of sugar.
  2. 2. Heat a skillet over medium heat. Brush with oil. Pour in half the eggs. Swirl the pan to make a thin crepe. Cook 1 minute until set. Flip a cook another minute. Repeat with remaining egg mixture.
  3. 3. Stack the crepes on top of each other. Roll up and slice into very thin ribbons.
