Instructions
  1. Toss the mint leaves and the simple syrup in a shaker glass. Muddle gently.
  2. Add the lime juice, rum and ice. Shake.
  3. Strain into a highball over ice, top with ginger beer to taste.
  4. Garnish with mint.
