Method
  1. Preheat oven to 400°F.
  2. Arrange a quarter of the shallots, orange slices and tarragon on one side of each of the parchment papers (see our Here’s How instructions for how to build the package).
  3. Top each with a salmon fillet. Next, top each fillet with a teaspoon of olive oil and a tablespoon of wine.
  4. Season each with salt and pepper.
  5. Bake for 10 minutes.
  6. Garnish with tarragon.
Here's How: En Papillote
  1. Cut parchment paper into a 12-inch x 14-inch rectangle. Fold the paper in half. Cut into a heart shape
  2. Place dry seasonings on one side of parchment paper
  3. Top with protein, wet ingredients and season with salt and pepper
  4. Starting at one end, tightly fold the edges of the parchment. Continue folding entire length of the package.
  5. Bake on baking sheet. Carefully open each packet, allowing steam to escape before serving.
