Make lime simple syrup by combining 3/4 cup water and 3/4 cup sugar in a pot.
Bring to a boil. When sugar has dissolved, remove from heat. Add the peel of 1 lime.
Let steep for 30 minutes. Layer 1/2 cup each of raspberries, blueberries and
strawberries (hulled and halved) in individual mason jars. Top each with fresh mint.
When ready to serve, pour equal amounts of the simple syrup over the berries.
