Method
  1. Heat a gas or charcoal grill to medium-high heat. Toss the wings with a drizzle of olive oil and season with salt and pepper.
  2. Grill 20-30 minutes covered, turning every 5 minutes until the skin is crispy and the juices run clear. If the wings start to burn, move to an area of the grill with a lower heat.
  3. Remove the wings, toss with several tablespoons of sauce (about 1/4 cup) then return to the grill.
  4. Grill another 5 to 8 minutes, turning once until the sauce is slightly charred. Serve alongside additional sauce for dipping.
Here's How: Kansas City Barbecue Sauce
  1. 1. Sauté a finely diced onion in 1 tbsp butter in a medium saucepan set over medium heat. Sauté the onion until soft, about 5 minutes. Add the garlic and cook another 30 seconds.
  2. 2. Add 1 cup ketchup, 1/4 cup molasses, 1/3 cup brown sugar, 1/3 cup apple cider vinegar, 1/2 tsp smoke paprika, 1/4 tsp pepper and 1/8 tsp cayenne pepper.
  3. 3. Stir to combine. Simmer about 20 minutes until thickened. Let cool. If desired, blend into a smooth sauce.
