Method
  1. Using a knife, loosen the membrane on the bone side of the ribs.
  2. Using paper towel, firmly grab the membrane and peel away from the bone.
  3. Trim off any excess fat and cut away the small bone on the meat side of the ribs.
  4. Combine the rub ingredients. Spread over the ribs, being sure to rub the entire surface.
  5. Refrigerate until ready to use, at least 30 minutes.
  6. Next, make the sauce. In a small saucepan, heat 1 tablespoon of the butter over medium heat.
  7. Cook the onions and garlic until soft, about 5 minutes.
  8. Add the remaining ingredients.
  9. Bring to a boil then reduce the heat. Simmer for 10 to 15 minutes.
  10. Stir in the remaining 1 tablespoon of butter and season to taste with salt and pepper.
Here's How: BBQ Ribs
  1. Have your ribs prepped and ready to go. Heat a gas or charcoal grill to 225-250 degrees F (leave one side off). Please the ribs on the side of the grill away from the direct heat.
  2. Place a small heat-proof dish of water on the grill to maintain moisture. Cook offset (4 to 5 hours), checking that the temperature remains constant. Spray periodically with apple juice, if desired.
  3. In the last hour of cooking, brush the ribs with the sauce. After 15 minutes, flip the ribs and brush with sauce again. Repeat every 15 minutes until the ribs are tender.
  4. Remove the ribs from the grill. Let rest for 10 minutes. Slice along the rib bones.
