Instructions
  1. Heat the oil in skillet over medium-high heat.
  2. Cook the onions until soft, about 3 minutes.
  3. Add the spices and cook 1 minute until fragrant.
  4. Add the lamb, stirring to mix in the spices thoroughly. Add the tomatoes.
  5. Cook until the lamb is no longer pink and the tomatoes start to pop. Let cool slightly.
  6. Combine the olive oil and harissa, adding more if you like it spicy.
  7. To serve, spread hummus on a platter. Top with tomato lamb mixture. Drizzle with harissa oil.
  8. Sprinkle with additional za’atar if desired and garnish with herbs. Serve with your favourite pita or flatbread.
Recipe Notes

*Za’atar is a Middle Eastern spice blend made primarily of thyme, sesame seeds and sumac. It’s available in most supermarkets or Middle Eastern specialty stores.

**Harissa is a hot pepper paste available in tubes, cans or jars at local grocery stores.
