In a large skillet, heat the butter over medium heat. Add the garlic and shrimp, seasoning with a pinch of salt and pepper. Cook until the shrimp just turns pink. Let cool slightly then roughly chop. In a bowl, whisk together the flour, baking soda and Old Bay seasoning. Stir in the shrimp and half the green onions. In a separate bowl, whisk together the buttermilk and eggs then add to the flour mixture. Stir until just combined. Deep fry the fritters by following our Here’s How instructions. To serve, toss with warm honey, additional Old Bay seasoning and garnish with remaining green onions.
Here’s How: Deep Fry Fritters
1. Fill a large saucepan with 2” of oil. Heat to 350 degrees.
2. Drop the batter by the tablespoon being careful not to overcrowd the pot. Cook 3 minutes until golden brown, flipping to ensure all sides are cooked evenly.
3. Drain with a slotted spoon and transfer to paper towel. Repeat with remaining batter.
