Instructions
  1. Place dandelion greens, Parmesan, garlic and pine nuts in a blender.
  2. Slowly pour in the olive oil and blend until it forms a paste. Periodically scrape down sides of the blender to ensure all the ingredients are incorporated into the pesto.
  3. Meanwhile, cook pasta according to manufacturer’s instructions.
  4. Drain the pasta, reserving some of the pasta water. Toss the pasta with the dandelion pesto, the lemon juice and a good splash of the pasta water.
  5. Serve with additional grated Parmesan.
Recipe Notes

If you can’t find dandelion greens, substitute with another bitter, spicy green such as arugula.
