Method:
  1. Place whole potatoes in a large pot of water. Boil until fork tender. Drain well. Let cool and dice.
  2. In a small pot of boiling water, blanch peas for 2 minutes until just tender. Place in a bowl of ice water. Drain.
  3. Make the curry powder according to our Here’s How instructions.
  4. Stir the prepared curry powder with the yogurt, mayo and honey.
  5. Combine with the potatoes, peas, green onions and cilantro. Add lemon juice and season to taste with salt and pepper.
  6. For best results, refrigerate for at least 30 minutes to let the flavours develop.
Here's How: Homemade Curry Powder
  1. 1. In a dry skillet over medium heat, toast spices for 2-3 minutes until fragrant.
  2. 2. For a rought grind, mash in a mortar and pestle. For a finer grind, use a spice or coffee grinder.
  3. 3. Grind until smooth.
