Method
  1. Remove the crab meat from the legs.
  2. Divide the arugula among four plates.
  3. Arrange avocado, corn, crabmeat and green apple on top.
  4. Make the dressing by placing minced shallot, grapefruit juice, lemon juice, lemon zest and honey in a bowl.
  5. Slowly whisk in the olive oil.
  6. Drizzle the salad with the dressing.
Here's how: Cut an avocado
  1. With one hand, hold the avocado firmly on a cutting board. Using a small knife, cut the avocado in half through the centre. Twist apart the two halves. Use the knife to knock out the pit.
  2. Place a tea towel over your hand then hold the avocado firmly. Using a small knife, cut vertical slices through the avocado.
  3. Use a spoon, scoop out the avocado pieces. Use immediately.
