Method: Preheat oven to 300°F. Mix eggs, Amaretto and vanilla extract in a bowl; set aside. In another bowl, combine flour, sugar, baking powder, salt and almonds. Add dry ingredients to wet ingredients; mix. Scrape out dough, divide in half and place on parchment lined baking sheet. Dust with flour and form the dough into 2 10-inch by 5-inch logs. Bake for 45-50 minutes. Let cool. Slice into 1/2-inch wide pieces. Return to oven and bake for another 40 minutes, flip the biscotti half way through to make sure they cook evenly.
